Next to the old quarter in the center of Bologna is Mangingiro – a self-styled fast-food operation with an exciting little twist.
Firstly, Mangingiro was founded in 2009 after a successful pilot project showed a tremendous interest in their speciality called the ‘Tigelleria’. It’s basically a mini-snack cooked over heated stone which hails from the Apennine mountains and traditionally would have been cooked in the corner of an old fireplace.
A typical Tigella is smaller than its more famous and bigger cousin the piadine. However, not to be outdone though these mini-snacks are carefully prepared in more than 50 recipes from the classical salami filled ones to the more creative vegetarian and even gourmet choices.
The menu, like the rest of the shop, reflects a colourful view through a rich and historic local past as many of the names are taken from the Bolognese dialect but now given a facelift for a younger more mobile generation who seek high quality food experiences at reasonable prices.
Considering their great success so far here in Bologna the company has ambitious plans for the future even planning to operate it as a stand-alone franchise.
