The Stickhouse is the first of its kind in Bologna. Established in March 2010, as part of a franchising chain, it has grown from strength to strength in just a short period. Although unusual in Italy the idea of ice-cream on a stick is hardly new since it was actually born in this country, however, this type of business is making a come-back.
The ingredients are above all, natural and guaranteed to be 100% genuine. In addition to milk, cream (in the case of sorbets and water), they use carob seed flour as a thickener, which is 100% vegetable and gluten, inulin (a carbohydrate that promotes the balance of intestinal flora by increasing its activities and improving the metabolism. It also improves digestion by reducing the formation of gas in the intestine). For many other types of ice cream fructose is used instead of sucrose.
As a matter of interest the most popular ice-cream here, is the pistachio, although during the hot summer months fruit sorbets are as equally appreciated.
Among future ambitions at Stickhouse is one to achieve gluten-free status. Considering the very strict safety measures needed to reach this point, it may take another while but it’s one path they plan to follow through on so watch this space.
